Single & Fat's California Batch is made exclusively from Arbequina olives, cold-pressed from a single certified organic grove.

Single origin means the oil comes from one farm or grove rather than being blended from multiple sources across different regions or countries. This gives you full traceability — you know exactly where your oil came from, who grew it, and when it was harvested. Most grocery store olive oils are blends.

Cold pressing means the olives are crushed and extracted without using heat. Heat can degrade the delicate polyphenols and aromatic compounds that make high-quality olive oil worth using. Cold-pressed oil retains more flavor, antioxidants, and nutritional value than heat-extracted alternatives.

Polyphenols are natural antioxidant compounds found in fresh, high-quality olive oil. They contribute to the slightly peppery or bitter finish in good extra virgin olive oil, and are associated with the health benefits linked to Mediterranean diets. Polyphenol levels degrade over time and with exposure to heat and light — which is why freshness and proper storage matter.

Most mass-market olive oils are blended from multiple countries, processed with heat to extend shelf life, and may sit in warehouses for months before reaching you. Store in a cool, dark place — away from heat and direct light. A cabinet near the stove is fine; on the counter in direct sunlight is not. Properly stored, the California Batch will stay at peak flavor for 12–18 months from the harvest date. Once opened, we recommend using within 3 months for best flavor.

Both. Arbequina oil has a relatively mild flavor profile and a smoke point suitable for light sautéing and everyday cooking. But it's good enough that you'll want to use it where you can actually taste it — as a finishing oil on pasta, vegetables, eggs, or bread.
